Black Peppers
Black pepper is produced from the still-green, unripe drupe of the pepper plant. The drupes are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the pepper, accelerating enzymes that cause browning during drying. Peppers drupes can also be dried in the sun or by machine for several days, during which the pepper skin around the seed shrinks and darkens into a thin, wrinkled black layer containing melanoidin and once dried the spice is called Black Peppercorns.
White Peppers
White pepper consists solely of the seed of the ripe fruit of the pepper plant, with the thin darker-coloured skin (flesh) of the fruit removed. This is usually accomplished by a process known as retting, where fully ripe red pepper berries are soaked in water for about a week so the flesh of the peppercorn softens and decomposes; rubbing then removes what remains of the fruit, and the naked seed is dried.
Green Peppers
Green pepper, like black pepper, is made from unripe drupes. Dried green peppercorns are treated in a way that retains the green colour, such as with canning, or freeze-drying.
Red Peppers
Red peppercorns usually consist of ripe peppercorn drupes preserved in brine and vinegar. Ripe red peppercorns can also be dried using the same colour-preserving techniques used to produce green pepper.
Bay Leaves
The bay leaf is an aromatic leaf commonly used as a herb in cooking. It can be used whole, either dried or fresh, in which case it is removed from the dish before consumption, or less commonly used in ground form. The flavour that a bay leaf imparts to a dish has not been universally agreed upon, but many agree it is a subtle addition. Bay leaves come from various plants and are used for their distinctive flavour and fragrance. Bay leaves are pungent and have a sharp, bitter taste. As with many spices and flavourings, the fragrance of the bay leaf is more noticeable than its taste. When the leaf is dried, the aroma is herbal, slightly floral, and somewhat similar to oregano and thyme. Myrcene, a component of many essential oils used in perfumery, can be extracted from this bay leaf. They also contain eugenol. Bay leaf is typically used in cooking to flavour broths, grains, soups, stews and stocks.

Immune system health:- Bay leaf is a good source of vitamin A, vitamin B6, and vitamin C. These vitamins are all known to support a healthy immune system.
Digestive aid:- Bay leaf tea can help ease bouts of upset stomach. The tea is also very aromatic, which can help relieve sinus pressure or stuffy nose.
Reduces type 2 diabetes risk factors:- A pair of small studies suggested that taking ground bay leaf capsules or drinking tea brewed from Turkish bay leaf may lower your blood sugar levels. However, one of the studies was small and the other tested bay leaves on healthy volunteers, not people with diabetes.

Mustard Seeds
Mustard seeds are the small round seeds of various mustard plants. The seeds are usually about 1 to 2 millimetres (1⁄32 to 3⁄32 in) in diameter and may be colored from yellowish white to black. They are an important spice in many regional foods and may come from one of three different plants: black mustard (Brassica nigra), brown mustard (B. juncea), or white mustard (Sinapis alba). Grinding and mixing the seeds with water, vinegar or other liquids creates the yellow condiment known as mustard.
Mustard seeds (Brassica Napus) also known as Rape, Oilseed rape, Rapeseeds, and Canola are very widely cultivated throughout the world. Mustard seed is the third leading source of vegetable oil in the world after Soya bean oil and palm oil. It is world’s second-leading source of protein meal after soybean meal. Mustard seeds oil content varies from 33% to 46% and average oil recovery is around 32% to 38%. After oil extraction, the remaining part of the seed is used to produce a rapeseed/mustard meal, an important source of cattle and poultry feed. It is basically a winter crop and it requires a temperate climate to prosper. The planting season or the sowing period in India is during the Rabi season i.e. October to November. The crop starts flowering in the months of November, December, January, and February. The harvesting period is from February to March. It needs the right proportion of rainfall during the sowing seasons of the crop.
